ENTEROBACTERIACEAE IN EGYPTIAN SOFT CHEESE AND THEIR PUBLIC HEALTH SIGNIFICANCE

Abstract

A total of 50 samples of Egyptian soft cheese (fresh Kareish and Domiati) were collected from Beni-Suef City markets and shops for enumeration, isolation and identification of Enterobacteriaceae organisms. The mean value of Enterobacteriaceae ,count/gm were 1.34x10 + 92.61 x 10 and 5.85 x 10° + 3.72 x 10 for examined Kareish and Domiati cheese respectively. E.coli was detected in 23.33% and 10% of the examined samples respectively. Enterobacter, Klebsiella, Citrobacter, Proteus, Pro videncia, Obesumbacterium proteus biogroup and Morganella morganii sp < /strong>p < /strong>. were isolated in different percentages. Salmonellae and Shigellae organisms could not be detected. The public health importance of the isolated organisms as well as the suggested measures for improving the quality of such products were discussed.
