Fifty random samples of frozen livers were aseptically collected from different shops and supermarkets in Assiut city. The samples were examined for: aerobic p < /strong>late counts, enterobacteriaceae and staph. aureus counts and for detection of Salmonellae and Shigellae. The aerobic p < /strong>late count ranged from 2x10 to 2x10 g with a mean value of 5.25x10 /8. The counts of Enterobacteriaceae and Staph. aureus ranged from 2x10 to 2X10/8 and 2x10 to 2x10'/g with a mean value of The Enterobacteriaceae which could be isolated from the examined frozen livers samples were identified as: Citrobacter spp < /strong>., Hafnia alvei, Enterobacter sp < /strong>p < /strong>., Klebsiella spp < /strong>. and Proteus spp < /strong>. Salmonella and Shigella could not be detected in the examined liver samples
